Method
Shrimp:
- Marinate shrimp with all the ingredients listed under "Shrimp" and let sit while you chop the vegetables and boil the noodles.
Noodles:
- Boil noodles according to package directions. Drain, rinse with cold water, and toss with a little oil to prevent sticking.
- In a wok or wide frying pan, heat the oil and add onions, garlic, and ginger. Sauté for 3-4 minutes.
- Add carrots, cabbage, green bell pepper, and orange bell pepper, followed by 1/4 tsp salt and 1/4 tsp black pepper. Stir fry for 3-4 minutes.
- Add the marinated shrimp and stir fry until the shrimp turns pink.
- Add the noodles, followed by 1/2 tsp salt, 1/2 tsp black pepper, soy sauce, vinegar, and chili garlic sauce. Stir fry for 5-7 minutes. Adjust seasonings.
- Garnish with chopped scallions and enjoy hot.
