Shrimp Hakka Noodles

Stir fried noodles, shrimp & vegetables using Desi Chinese flavors

Ingredients
  

Shrimp:
  • 1 lb. shrimp tails on
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp soy sauce
  • 1/2 tsp chili garlic sauce
Noodles:
  • 1 package veg hakka noodles (I use Ching's Secret brand) 600 grams
  • 1/4 cup oil
  • 1 cup thickly sliced onions
  • 6 cloves garlic, minced
  • 1 tbsp julienned ginger
  • 1 cup carrots cut into matchsticks
  • 2 cups sliced cabbage
  • 1/2 of a green bell pepper, thinly sliced
  • 1/2 of an orange bell pepper, thinly sliced
  • 3/4 tsp salt divided
  • 3/4 tsp black pepper divided
  • 3 tbsp soy sauce
  • 3 tbsp vinegar
  • 2 tbsp chili garlic sauce
  • scallions for garnish

Method
 

Shrimp:
  1. Marinate shrimp with all the ingredients listed under "Shrimp" and let sit while you chop the vegetables and boil the noodles.
Noodles:
  1. Boil noodles according to package directions. Drain, rinse with cold water, and toss with a little oil to prevent sticking.
  2. In a wok or wide frying pan, heat the oil and add onions, garlic, and ginger. Sauté for 3-4 minutes.
  3. Add carrots, cabbage, green bell pepper, and orange bell pepper, followed by 1/4 tsp salt and 1/4 tsp black pepper. Stir fry for 3-4 minutes.
  4. Add the marinated shrimp and stir fry until the shrimp turns pink.
  5. Add the noodles, followed by 1/2 tsp salt, 1/2 tsp black pepper, soy sauce, vinegar, and chili garlic sauce. Stir fry for 5-7 minutes. Adjust seasonings.
  6. Garnish with chopped scallions and enjoy hot.
